Sunshine Pasta




I love pasta. I love how I can throw in just about any vegetable into it and make the dish look and feel like a million bucks. This pasta was the result of what I had in my crisper one morning. Just like my
Green Salad "happened", this sunshine pasta came together with a little bit of this and some of that.


1 cup Fusilli, prepared according to directions on the package
2 Medium Carrots, sliced and steamed
1 Orange Pepper, sliced
1 Yellow Pepper, sliced
1 Red Pepper, sliced
2 Tomatoes, sliced
1 Onion, sliced
1 tbsp Olive Oil
1 tsp Oregano
½ tsp Basil
½ tsp Parsley
1 tsp Chilli Flakes/Paprika
1 pod Garlic, finely chopped
Salt and pepper to Taste


Heat the oil in a pan and add the garlic. After a minute, add the onions and the chilli flakes/paprika. Fry for a minute more. Add the herbs and the tomatoes. Fry for 2-3 minutes. Add the peppers along with the carrots and cook for 4-5 minutes. Toss in the pasta. Season with salt and pepper. Serve hot.

We love pasta too (especially Akshaya and me) and I keep doing this too. Putting wahtever veggies are in my fridge bin and whichever herbs catch my fancy.:)

since i am on a low card diet, pasta is something i try to stay away from. trying to get some whole wheat pasta though..

What you said is perfectly true! You could add anything to it and it will taste great anyway:) I add some sauce too:)

This recipe name suits the dish down to a tea, very colourful and joyful as well as tasty I am sure. thx 4 sharing
