Pumpkin Cake




This month has been very busy for me. I thought last November was the month that would have the least number of posts, but it does look March might replace November. If not, it is likely to give November a good chase. While I am hosting an event this month, my own blog has seen very few posts. I am cooking and baking. In fact, slightly more than usual. But I haven't been finding the time to blog as often.




After seeing Sig and Nupur's posts on Taste & Create, I went to Myamii's blog, For the Love of Food, to sign up for this month's event. This is an event that pairs up willing bloggers and then gets them to create one dish from their partner's blog. I was paired up this time with Ben of What's Cooking. I went to his blog and got carried away for a bit. Then I realized what I was there for. I browsed through a predominantly meat based blog to find something that I could create. I decided the dessert section was best for me. And then I found what I was looking for.


I made a few changes to Ben's Pumpkin Cake and made what he calls a bread. But since I don't frost 90% of my "cakes" I will call this a cake for now.

1 cup Brown Sugar
1/2 cup Oil
2eggs
1cup Flour
1 tsp Cinnamon Powder
1/4 tsp Ginger Paste
1 tsp Baking Powder
1/4 teaspoon salt

1 cup Pumpkin, cooked and mashed

1/3 cup Walnuts, chopped



Preheat the oven to 350F.

Grease a 9 inch cake tin.

Beat the eggs, oil and sugar together. Add the dry ingredients and stir until well mixed. Add the mashed punpkin and beat for a minute. Stir in the walnuts. Pour the batter into the greased cake tin and bake at 350°F for 35 to 40 minutes. Cool on a wire rack and cut into wedges.

We devoured a couple of wedges almost as soon as I cut the cake and it was very tasty. It was just the way cakes ought to be, not too sweet, light and moist. This recipe is a keeper!

looks lovely....i too cant keep my paws off fresh from the oven cake...and i love eating it when still pretty warm....whadaya mean least number of posts?? i came here last week and then now....and i see four more!! good going girl!!

I know what you mean by cooking a lot and not blogging much! Anyway, I'm trying to make up for your not posting, trying to keep up the tempo at my end...I baked a pumpkin tea cake once (blogged too) and loved it...nice to take part in an exchange event.

The cake looks so very soft and moist. Cooking from others' blogs is so much fun.
I like the idea of baked banana fritters. Should try it out sometime.

The pumpkin cake looks good.. cream cheese frosting makes a good pair for this and it makes it taste almost like a carrot cake. The mojito has a beautiful colour.

@Laavanya: We don't get cream cheese here :-) and in any case I'm bad at frosting at the moment... prefer unfrosted cakes for home use :-) when I learn, things will be different (hopefully) :-)

Oh that much have been so much fun.....cooking from some one else's blog...getting to know someone else... Missed out on somany good recipes of yours because of my break from the blogosphere...the cauliflower cheese paratha and ginger pear muffins look awesome...will check out the other recipes soon:)

but i dont have an oven - so lesser baking related recipes would help. btw any alternatve to making those cashew pakodas without baking (i dont know much about cooking but mommy does - n we dont have an oven - does microwave count?)

@Chitty Cat: Less than 1/4th of my posts are to do with baking... do check out my archives. I bake some stuff instead of frying... in case you don't have an oven, you could always deep/shallow fry the pakodas. I am not sure if the microwave works in these dishes.
